The vast majority of KC BBQ, unless you're getting bbq chicken for some dumb reason, is sauce on the side. KC does like their sauce and it's a specific style but it's usually not served ON the stuff. Some of it might be brushed on during smoking but even that's not as common as people think.

I definitely prefer sauce on the side. I'm not a big fan of super messy foods.

So in the end we went to Jack stacks. I got burnt ends, pork ribs and beans (sauce on the side) It was all delicious.
