We don't know what Luke was up to for the last 30 years. Maybe he fully trained some students in that time and there are a few/several/many Jedi out there. Or it's possible he never fully trained anyone. Kylo Ren (Ben Solo) as far we know never became a Jedi. So Luke could well be the last true Jedi left.
The more I think about it, the more the title makes sense as singular. Seems to me if it was meant to be plural they would have called it Last of the Jedi or something like that. Calling it The Last Jedi is a blatant reference to Luke Skywalker. The movie is basically called Star Wars: Luke Skywalker.
It'll be interesting to see if Luke successfully trains Rey before he dies. If he dies.

I'd say no. They're difficult and so weirdly put together and really are kind of a chore.
There is one thing goin for them which is why everyone is staying with them for the new one and final one out this week which is it sets up this mystery of the emperor havin some secret facility on jakku and the final one explaining what that is and why the empires fleet final stand was above jakku.
I've tried with the first two and didn't finish either. There's far better books in the new canon though perhaps none as closely tied into the mystery and questions 7 left us with.
I'd say no but others might say yes.

I love it. Like you, I wasn't a fan of the animation at first. But it really grew on me. As the show progresses, it gets better. It's leaps and bounds better than the prequel trilogy. And I really love the show now. It's one of my very favorite Star Wars things. But I understand being reluctant. This is not peer pressure. But everyone you know in this thread will freely admit they were dismissive of the idea of watching a Star Wars animated series. Then when they watched it, they were engrossed and huge fans by even halfway.
I'd say you're missing out by not watching them. Especially if you're into backstory and filling out canon.
