Now that wease has reminded us of the real possibility that Rex lives... yeah. Zeb becomes the clear choice to kill off in the finale.

Several options here, though.

Rex thinks Obi-Wan is dead. We know this from Twin Sons. So even though he knew Kenobi, there's no real reason for him to talk to Luke about him. Not that we've seen.

Also, Rex doesn't know that Vader is Anakin. Right? I haven't read a lot of the canon books/comics and stuff, so maybe this is covered. But based on the shows and what we've seen, Rex doesn't know. So... it still technically works. But, yeah, still think it's a dumb retcon.
