So he's never gonna mention to Luke Skywalker, who's on the same mission with him, 'hey, eh Commander Skywalker, eh, I knew your pops way back when... yknow before the other thing'

Several options here, though.
Rex thinks Obi-Wan is dead. We know this from Twin Sons. So even though he knew Kenobi, there's no real reason for him to talk to Luke about him. Not that we've seen.
Also, Rex doesn't know that Vader is Anakin. Right? I haven't read a lot of the canon books/comics and stuff, so maybe this is covered. But based on the shows and what we've seen, Rex doesn't know. So... it still technically works. But, yeah, still think it's a dumb retcon.
Rex doesn't know Anakin is Vader. He thinks Anakin is long dead. Which is EXACTLY why as an old war horse he would say it to luke, no?

This is very Irish of me cos if you meet another Irish guy while overseas and you know someone in the town he's from it's usually the first thing you ask. And you usually end up both knowing the guy.

I don't think it's weird if Rex and Luke never have this conversation given that Rex is on Endor and Luke is with Vader and the Emperor for most of Jedi. But even if we let that go, it's still possible, as Ruddo said, that they DO have a conversation and we just haven't seen it yet. But either way it doesn't change anything down in the fabric of Star Wars.
Heard today about a deleted ROTJ scene that ties beautifully into R1
During the battle over and on Endor The emperor orders the Death Star to fire on and destroy the moon and the imperial commanders are all conflicted cos they have men down there but it was dropped cos it made no sense in the final story. And Lucas basically.
