Those things.....I have an extra grate on hand so I can lay my shattered plate setter between it and my cooking grate. Wallah! Just like new!
Less judgement, more curiosity.

wow, Eggs are expensive. the lady likes her smoked meats and all, but not sure the price tag of one of these would go over well. i'm going to look into the barrel style smokers. know a couple people who seem to love them.
btw, thanks. and i will try that baby back recipe in due time!

Re: The Red Mosquito BBQ Shack
Does anyone here use wood chips / chunks while grilling?
I'm all about it. I have Alder, Hickory and Mesquite chips, and Apple chunks. I'm a fan of mixing them up some, for example, I find Hickory to be a bit strong, but mixing them with Alder chips tones the Hickory down and makes for a great smoke flavor.
I'm trying to get ahold of some Orange chips, and I hear good things about Pecan. What do y'all use?

I like hickory but I also like to smoke with oak.
The bourbon soaked chips are good too.
Lately I've been doing more with cedar planks and also Emeril's Smoker Bags (easy cleanup)
