That sounds awesome. How long did you cook the shrimp and scallops? I find there's always such a fine line between under and over-cooked.

I just put them at the very last ladle of stock, stir a bit and let it stand covered for 10 minutes. If you have bigger seafood, they can be sauté-ed with garlic at the beginning of the preparation - then you deglaze with white wine and use the liquid to start your rice in.

I'm going to try and tackle the gourmet cheese fries tonight. Making fries topped with English white cheddar and black truffles.

Yes, it seems to me the best option is to simply dip your fries into whatever you were originally going to put on top of them.
