Oberyn's performance against the Mountain, masterful as it was, would be far less effective against Barristan. Oberyn was counting on Gregor blitzing him from square one, and danced around pot-shotting him until he tired. Which makes perfect sense against someone that size, as enormous men are typically not blessed with the greatest gas tanks. Barristan, however, is not going to attack in the same way. Given his age and lack of exceptional physical attributes, he would have to approach the fight with a much more relaxed and cerebral approach. Taking his time, parrying Oberyn's attacks, and looking for the opening that such a flamboyant and high octane attack is bound to provide. He's also outfitted in full plate and mail, whereas Oberyn is very lightly armoured, wearing no plate, no mail, and copper scales. Barristan is going to be able to sustain more hits due to this, whereas Oberyn likely dies the first time he fucks up. His age is a definite factor, yet he won the tourney at Kings landing 4 years prior to A Game of Thrones, proving his ability to defeat much younger opponents. And Oberyn, while 20 years younger, isn't a young man himself. In the end, I think Oberyn's raw, emotional fighting style is his undoing. Barristan might only get one opportunity, but that's all he needs.

What I really need to know is, will Oberyn be using poison on his spear for this fight?

I considered that, but the poison wouldn't be a factor until a few days later. Though it would fuck up the later tournament bracket.

Barristan is my guy.

There's also no evidence that he always fights with a poisoned spear. He did against Lord Yronwood, and again against the mountain, but those were both duels that he had more of a vested personal interest in, outside of simple combat.
