pozole is great. had a vegan version a couple of weeks ago in new mexico.

a large pot of kidney beans.
i'll saute some garlic and onions, add in some cumin, turmeric, salt and pepper, and chili powder.
oh, and sliced jalapenos.

whenever I do a soup recipe that requires cumin I always add at least 3 times the amount they ask for...hasnt failed me yet..did it with the pozole
