i've never really considered that nondescript, fly over state a part of the midwest. i assume this is why nebraska was originally a part of the big 8 conference and not the big 10.

Mix
2 TBS fresh chopped rosemary
2 TBS fresh chopped thyme
5 garlic cloves chopped
TBS of chopped lemon zest
1 Tsp of oregano
1 tsp coriander
1/2 tsp red pepper flakes
1 TBS kosher salt
1/2 tsp black pepper
1/3 cup of olive oil
cut slits in chicken breasts, thighs, and legs and work mixture in and marinate for up to 2 hours
Arrange chicken pieces (with wings) in a skillet and top with mixture. Bake on top rack on 425 until breasts measure 160. Then put under broiler to brown (about 2 mins). Mix TBS lemon juice in drippings and serve with it slathered all over.

Didn’t get to do the chicken. With all that happened today I forgot to marinate them. So, just roasted thighs and creamed spinach.
