Australian chicken enchiladas achieved!
Of all the ingredients I couldn’t source, it was cottage cheese haha. I subbed ricotta.
And I suppose mild green chiles. I went with one of the few options that wasn’t jalapeño and it ended up being spicy af.

Trying to make some kebab-less kebabs in the air fryer. Serving with Mediterranean rice and tzatziki. Hopefully it turns out well.
