In my mind there is no technique of coffee brewing finer than the pour-over. I'm drinking a stiff cup of Guatemalan right now, as black as a border midnight. I encourage each of you with access to a reputable brew house to spring for the hand pour. It's a painstaking, slow, and delicate process--almost rebellious in its unhurried pace. I used this time to get to know my barista a little better. What started as a comment regarding the interesting pour-over technique blossomed into a lovely chat about her daughter's craft project (do-it-yourself Valentine's Day cards).
