That makes perfect sense though

I believe a Rey "enslavement" (owned by Unkar) was more plausible than Anakin and Shmi being slaves to Watto. At least she lived in a makeshift home and had to scavenge to get her portions.

Not really. She’s an adult, resourceful, gets by just fine, has her own place, independent. But that’s all we know

You don't get much about Luke from ANH.

-Father betrayed and murdered by Darth Vader
-piloting/bullseye womprats (skills for the Death Star run)
-living with Aunt and Uncle, so we know his parents are gone


Rey (TFA)
-parents left her
-force awakens within her, she doesn't know why
-scavenger
-has technical knowledge of spacecraft from scavenging, seeing Unkar tweak Millennium Falcon)

The beauty of the OT was that you are introduced to characters in the middle of their stories; you learn their story beats within the context of the movies. And secondary/tertiary characters come and go as the story needs dictate. And that's it.

In my opinion, the more you learn, the less appealing they become. And the more characters are related to one another (or convenient crossing paths) the more the universe is constricted and the story limited.
