That being said the theme of GoT is very different. It's about pursuing power, dying in the pursuit of power, and everybody trying to kill you once you have power. So I guess all bets are off.

No, common people have no surname. The name Snow is the last name given to a Lords bastard. He can't inherit his land or titles unless his dad legitimizes like Ramsay was.

Not really...while I'm pretty sure there are low-born people who have bastard names, the examples I can think of from the books are mostly people with one high-born parents (like: Jon, Ramsay, some of Robert's bastards, Ellaria Sand). It's mostly used to try and shame these people, which is why Ramsay getting to be a Bolton is such a huge deal.

Sort of. Many of them followed the geographic bastard naming as well, like Brynden Rivers. Blackfyre actually became a cadet branch of the Targaryen house after one of them was legitimized. Which makes me even nerdier
