The only thing that makes me scratch my head is: why does Manderlay care about recovering Rickon so much? If it's all about John, then why can't the cannibals have him?

Because is Jon is legitimized then Bran and Rickon become Jon's heirs and there is value in keeping the king's heirs safe, and they might assume Bran is dead at this point.

And he has to refer to the young Starks as his "liege lord" to Davos because he can't let the cat out of the bag that Jon is the actual heir to Robb.
