Pho is improved greatly when omitting the sprouted mung bean garnish. I wish the places around here would stop offering that by default.

What is it about the bland crunch of the mung bean sprout that is essential to pho? The texture totally distracts from the noodles. It adds no new color to the bowl either.

I clarified my position above. I'm with you on the freshy fresh goodness of lime, cilantro (and basil!) but the sprout is one garnish too far for me.
