We did a huge pork butt in the crock pot over the weekend, so I have a ton of that leftover.

Just crisp up the shredded pork in a little bit of olive oil on the stove.
cooked a portabella cap in butter, cut it into pieces.
used some store bought spicy chinese style mustard and mixed with some sour cream and mayo. Heavier on the sour cream so it is less solid.

Not really a recipe, I know, but I've done this one before when we have leftover pulled pork and it is so good. Will probably do again tonight.
