To Assemble Enchiladas: Heat tortillas until soft. In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture and a bit of shredded cheese. Roll tortillas and place in a lightly greased 9x13 inch baking dish. Top with any remaining meat and cheese mixture, enchilada sauce and remaining shredded cheese.

Bake at 350 degrees F (175 degrees C) for 30 minutes or until cheese is melted and bubbly.

Even though the enchiladas I make are already fricken good, I'm going to try this one.

holy hell was this good. highly recommended: easy, cheap, quick, and flavorful as hell.

used the recipe in the video, except substituted the second onion for about a dozen portobello mushrooms. roasted the sprouts in the oven with olive oil, salt, and pepper while the meat rested.

We made a tomato soup today but oddly tasted better cold like a type of Gazpacho.

Tonight I'm making a salad while a new lady friend is working on a pizza. I want to do something simple but artful, flavorful, and most importantly, hard to screw up. I'm thinking Kale with avocado and dried cranberry. What else should happen here? Goat cheese?
