Thanks for the write up Sarge; it's really helpful.
As for Rangi, Mecca, and Sarge's comments about Nintendo, honestly the reasons I eliminated it were (1) I'm admittedly naive when it comes to this stuff, and what I've read suggests that the only debate is between Xbox and PS4, and (2) the limits on games for Nintendo, including Minecraft (which is all the rage for kids my son's age).
I really like the kid-friendly games on Wii U, including the Nintendo-only games. I was just under the impression that it was something to avoid for the reasons stated, and because of the suggestions that the Wii U was kind of flop, and therefore Nintendo would be releasing a next-generation console sooner rather than later (and the last thing I want is to drop $$ on it only for it be completely antiquated next year or the next).
So that's my dilemma, and am not sure what to do.
I must admit, the price for the Wii U v. PS4 is pretty attractive.

The Wii U is doing better in sales as they come out with more games. This past year and next year have a whole bunch of great looking games coming out.
As far as Minecraft, my stepson was huge into it for a while, but he always said that it was way better on the PC than on XBox. Could your kid just play Minecraft on the PC?

Ruddo -- absolutely, and that's a good point. He could probably play it on our iPad as well.

I know there is a pretty solid PS4 bundle available as well with Little Big Planet 3 and Lego Batman 3 for 399. Your kids would love that.

Also, to those that have Wii U (and sorry for the endless questions), how do you play games against a live opponent with only 1 controller (which I assume is the one that comes with the console that is touchscreen)? Do you have to buy a second controller? I'm so confused.

All 3 of the current consoles come with one controller. The gamepad works with pretty much all games to my knowledge to use as a controller. You can also use Wii controllers as well. I usually only use a Wii remote and a nunchuck.
To answer your question, you would need to buy a second controller for two people to play a game at the same time in the same room. You could either buy a Wii remote or a Wii U Pro Controller. Each game says which controllers work for it on the back of the case.

Yeah the game pad that comes with it works with most of the games, so you essentially have two controllers right off the bat. Try and get one that comes with the game Nintendoland, that has a bunch of family friendly mini games.

No, the gamepad has the same buttons as a normal controller, just a little bigger. So, one person can use the gamepad (and in some games look at the screen on the gamepad) while the other uses the nintento controller that also should come with the system. So your system should come with one of each of these:
