I think it’s the type of artichoke and the prep, which is attributed to the Jewish population of Rome. One of the oldest Jewish ghettos in Europe.
Anyway, I grabbed some jarred hearts (cuz fuck prepping an artichoke) and made them for lunch. Some parsley, mint, garlic, lemon, and the good olive oil. They turned out great flavor wise, but not crispy enough. Recipe said to cook them in oil and water, but forgot to account that they were jarred in water and not raw. I’ll try again with just oil and should be solid.

I wanted to roast some corn tonight, but the grocery only had corn that was pre-clipped on both ends. And that just straight up pisses me off.
