up at 530 to fry bacon and make omelettes for our guests who are leaving at 8am to get on the road...i need a bloody mary

an omelette is the one thing i think i have almost mastered over the years...no milk or cream needed..google ludo french omelette. i switched to that years ago and never looked backspike wrote:Shoring up my omelet game, made a much better one than a few days ago. An even slightly browned omelet is trash imo.
Thinking about mixing in some cream instead of milk to take things to another level next attempt.
