Sounds like a good approach. Seems firm enough to stand up to grilling well. The few times I’ve enjoyed it, I think it was grilled.

indeed, other than blackened catfish to cover up a muddy taste, my preference for fish is a simple broil with lemon / butter
although fried flounder or cod is also acceptable

I also eat the hell out of anchovies, herring, sardines, and mackerel, but enjoy them as a snack out of the tin, not in the way I eat the other fishes.

I can eat sole in butter sauce all day long..living up here now I've lost my interest in salmon except canned so I can make patties..

agreed, that's why aussie fish n chips > uk fish n chips. it's a lighter tempura breading.

Love it. It’s commonly served as a whole fish. Lots of olive oil. Grilled lemon and maybe olives, or other veggies.
Had it in Italy last year. Magnificent.

i went out for Tautog last weekend but couldn’t bring any in
was so cold
water still super cold
had two bites but lost ‘em
