Because, outside of sushi, I don't really understand the nuances/differences between it and Chinese.

Chinese food encompasses literally hundreds of different cuisines since they're basically their own continent. Cantonese and Sechuan cuisine are probably what Americans would identify with the most.

Japanese food is distinctive because of the ingredients mostly unique to Japan (seaweed, preponderance of seafood, etc.) and certain concepts like umami flavor over spicy, sweet, etc.

Japanese food sometimes has a reputation of being bland compared to other Asian cuisines, as the flavors are typically much more simple.

The few Peruvian dishes I've had were pretty fucking delicious.
