That's a good point. There likely isn't a man alive who knows more about Barristan Selmy's fighting style than Jaime Lannister. But that also means that he will be constantly comparing Selmy to his younger, likely faster self. As soon as they engage, Jaime will notice that Barry isn't as quick as he once was, and the arrogance will creep in. But, as with all fighters who continue to excel into their later years, as Barristan's physical gifts have diminished his cagieness and strategizing will have increased. And he's still remarkably quick, and we saw when he killed Mero with his staff. I think Barristan keeps him at bay until Jaime, who will likely spend the whole bout trashing talking him and trying to show him up, gets too flashy and pays for it. But this is definitely a evenly split match, and I could see it going the other way, too. I just think that experience and determination on Selmy's part is the intangible that puts him over the top.

I wouldn't take anything away from Jamie's determination. That's a man who is committed to little else other than winning. And Barristan has a ton of experience, but it's not like Jamie is some neophyte. This is hardly his first rodeo

No, he certainly isn't. But, as I see it, the only reason that this is so close is because of Barristan's age. In his prime, it's no contest.
