The sets aren't anything close to convincing and the acting sucks.
It's pretty typical TV acting for 1960's drama. It's just a different style that was aimed for...I think a lot of early TV (comedy, for the most part, exempted) was like early film...extremely informed by theater. Eventually, as TV and movie directors and actors began to see that the close up and "in the moment" realism of their format allowed for more natural behavior, they in turn influenced theater acting to a less....theatrical....design.

Most 1960's TV drama aged poorly. Star Trek is just maintained an infinitely larger presence in modern culture than its contemporaries.
do you guys think it's worth it to watch TOS from the beginning?
Watch Balance of Terror. Just that. Then, if you want more, you can start exploring. But if you end up having seen only one, that's the one.

If you have amazon prime you can watch the hd remasters of TOS for free. I watch them all the time.
