Do you think they separate it at that middle membrane and sell it whole and that’s what I’ve been buying as a flatiron cut?

Flat iron sounds like a new name for a previously unsellable cut. It’s probably the same thing.

There’s no variation in the flavour of beef anyways, only it’s texture.

there are a few different names for the flatiron...in the UK its the butter steak..

wease, I have no idea but i'm sure they cut them differently in places..either way it is a tasty cut

This is not even remotely true. Hamburger and filet mignon are worlds apart in terms of flavor.

Hamburger is usually comprised of near cartilage to offal though. It’s not really what we’re talking about.
