"Be Thou My Vision" is another one I really like. I've always been partial to Van Morrison's version but his mid-period Kermit the Frog voice may not be everyone's cup of tea:

Another one that brings back fond memories is They Will Know We Are Christians by Our Love. For one thing, the intensity of the verses always made me stand straight up when I’d hear it. But also, I could hardly keep a straight face when I’d hear an entire congregation making that “Ssss” sound when then word “Christians” was sung in unison. Like a room full of snakes hissing.

David Bazan has a very nice version of Be Thou My Vision as well.
