how much time are you saving by cracking and whisking the night before at the expense of having the eggs oxidize being dumpy and dense? this doesn't add up one bit.

Very well worth it and also factored our cooking apparatus at the tailgate location itself. Didn’t have room to scramble X dozen eggs on location. Also bought pre-cooked bacon.
At the tailgate we made breakfast burritos to order (heating up the eggs and bacon, not cooking from raw). We did melt the cheese onto the tortillas on location. Did one thing right.
All anyone cared about were the bloody marys anyway.
