Also I'll have to bite the bullet and get a new stock pot with a tight fitting lid. My largest pot is of ample size, but the lid is light and bounces around once the water gets rolling.
Do you find that sourcing hard-to-get ingredients in a small town gives you the same rush that coming face-to-face with a rare record that you read about in Circus Magazine did back in the analog days?

By the way, I made a beef pho last week. Beef bones. Boiled ground beef. Unbelievable umami. I’ve never used star anise before.
