I've never thought about bear before. I'd certainly try it if the opportunity presented itself, though. But yeah greasy doesn't sound like what I'd want from bear meat.

I want to try goose, too. I've had pheasant. The dryest, toughest fowl I've ever tried to eat. Literally like the sole of a shoe. Dove is really good.
