It's a very close call for me, since Rickman is consistently fantastic.
Galaxy Quest is a personal favorite of mine. I don't like the Harry Potter movies, but he is memorably great in them. His hilariously over-the-top villain role in
Robin Hood: Prince of Thieves is amazing. But, in the end, I just have to go with Hans Gruber in
Die Hard. That is the antagonist performance I judge all others against. Intense, scary, manipulative, untrustworthy, but also a little pathetic and funny - Rickman just OWNS that character. The accent and beard probably help a lot, too.
