It is. Im 8 years and im still learning. I usually move at a slower pace these days but when it comes to service...Colorado can be terrible.
Its really fascinating. I super respect the fact that a small business may not open up because the owner just wanted to go ski in the morning.....Or if a restaurant runs out of food because well....they just ran out of fresh food....
But I have sat at restaurants and literally waited for 30 minutes before being approached about getting water first. It can be frustrating.
You will need to slow down though.

My cousin recently visited me from NYC. He lived in Brooklyn and Manhattan for the past 13 years. The visit was wonderful but when we woke up in the morning I could tell how different our lives are. He wakes up and needs to go, go, go. What is going on today? Where is breakfast? where are we going? when does that go till?
Me? I wake up, have my coffee, relax for an hour, then figure it out.

We decided to try a new brunch place last weekend that looked good. When we walked in, we were greeted by a host/busser hybrid who explained the service to us. "Over there are the menus and iPads. Careful with the credit card reader, it's still a little wonky since we installed it." I'd heard about this sort of self-service before, but I'd never seen it in action. At the end of ordering, there was an option for a tip percentage on the payment screen. Me and my girlfriend are both in the service industry, and we both felt very odd not leaving our normal tip, so we did, justifying it by saying "well, we ordered bottomless coffee and they are bussing our tables, so we should still tip at least 20%." Surprise surprise, the coffee was self-serve. Still okay with tipping for what was just pre-bussing/bussing service, which was on point as expected.
A few major tweaks I'd do with this style of service:
1. Put pictures on the paper menu or on the TV screen menu above the iPads. Without a server selling things at the table, I'd like to know as much as I can about what I'm ordering. Especially if there is a line of people behind me.
2. Give the busser an iPad and make it a step of service to try to upsell when checking on us. This will increase sales, increase service, and increase tips. If there's something I wish I'd ordered, I don't want to leave my dining companion and my meal to wait in line for the iPad again.
3. Don't bread your corn fritters in fried funnel cake dough. That's nasty.
