You couldn't have picked a worse album to start off with. "Young Americans" is by far his weakest album from the 70's and is still somewhere near the bottom on my all-time list.

For that era, check out: The Rise and Fall of Ziggy Stardust and the Spiders from Mars and Hunky Dory.
There's no single definitive album for Bowie. He has had so many eras and styles.
For his more recent albums, Reality is worth a few listens. Give it a chance, as it's a real grower. Heathen is pretty good too.
Then there's his 80's and 90's albums too. Best to take your time with this, or you'll overdose and won't get a chance to give each album a proper course of listening.
I am not the biggest fan of Young Americans the studio album but the 'extras' that came with the deluxe version are actually really enjoyable tunes in their own right and I can't understand why they didn't make the album proper. And John, I'm Only Dancing would have to come close to being my fave Bowie song of all.
