The vast majority of KC BBQ, unless you're getting bbq chicken for some dumb reason, is sauce on the side. KC does like their sauce and it's a specific style but it's usually not served ON the stuff. Some of it might be brushed on during smoking but even that's not as common as people think.
It's all about slow cooking. And burnt ends. And ribs. And Joe's. And the Z-Man.

I definitely prefer sauce on the side. I'm not a big fan of super messy foods.

So in the end we went to Jack stacks. I got burnt ends, pork ribs and beans (sauce on the side) It was all delicious.

That's a good rule of thumb w/ KC BBQ. Always... ALWAYS get an order to go.
