i love the aged cheeses that when you bite into them there's a distinct crunch. i think they're called tyrosine crystals.

I know I've said it before, but here in the south, pimento cheese has become sort of a "craft" food. Lots of local places make and sell in the stores down here. Today, I tried this one and it was really good.
