super easy and delicious...

thai chicken curry

1 bottle of trader joe's thai yellow curry sauce
1/2 can coconut milk
3 boneless skinless chicken breasts, cut into bite size pieces
3/4 onion, quartered
2-3 carrots sliced into disks
1 green pepper sliced
fresh basil
1 1/2 cups jasmine rice

toss everything in the crock pot, except for the coconut milk, rice, and basil, and cook for 3-5 hours on high, stirring once in awhile. add the coconut milk with about an hour left. when the curry's ready, cook the rice, then toss it into the crock pot with the curry for 5 minutes. also toss in some basil for a few minutes, but reserve some for a garnish on top when ready to serve too.
