Had some marquis by Costello, described as "rich and buttery with a piquant flavor and subtle fruity notes". Bloody delightful.

Pecorino Romano may be my favorite garnish/accessory cheese out there. It is amazing what it does to certain pasta dishes.

Yeah that's primarily what I see. But we have an Italian deli/grocerette that has another brand that is good so I usually go with that

I think I would try the cheese "untouched by maggots", but this part sounds too gnarly:
"Some locals spin the cheese through a centrifuge to merge the maggots with the cheese. Others like it au naturel."
