made myself a home made beef-n-cheddar with leftover crock pot brisket..so good with plenty of horsey sauce

We had a bunch of random leftovers, so the wife threw together a sort-of carbonara. Used udon noodles (instead of traditional pasta) and turkey (instead of pancetta or bacon) and pecorino & parmesan cheeses. It was shockingly good.
