Yeah, doesn't have the edge that he has in clone wars. He was somewhat more menacing in Freemakers than I would have anticipated.

oh i'm up to the saw gererra episodes. The central premise (that the jedi cant actively interfere in their civil war) is stupid

What I'm finding intriguing is how her storyline actively influences decisions Anakin makes later when he finally succumbs to the dark side. They're really emphasizing that nicely. Hell, much better than the actual movies did.

Yeah the clone wars works really well as Lucas being able to fill out and expand the story he was trying to tell at the time. Bear in mind Ahsoka was reviled by the entire fanbase when she first appeared. And now is one of the most beloved characters. And integral as you said not just to anakins story but the entire mythology.
When they get it right they really get it right. And we haven't seen the last of her either.
I wonder is she the focus of the new animated series they're working on? Would make all the sense.
