Because they brought up Cersei's trial by combat, and because Arya brought up the hound for no reason other than reminding the viewers that we never actually saw him die. And
because Episode 7 is called The Broken Man, which references Septon Meribald's speech at the quiet isle, which seems to be a pretty solid hound reference.
