I think it will. Mandalorian is established as a popular show now, thanks to Grogu in part, but will move forward just fine without him. Grogu will go on to one of the other shows (Ahsoka, presumably) and he will carry that show for a season or two until the remnants of the Empire and not-dead palpatine finally kill him by draining all of the midichlorians out of him.

yeah grogu is so dead. The question is...is he going to be aged when that happen? or this cute little thing?
