I'm a little concerned this leftover sushi is going to make me ill. Should I be eating this?

I always leave about a 10% tip for takeout, but I'm in the food industry, so I'm morally obligated.
who gets the tip though if there's no waiter or waitress? the salaried manager working the front?

No, management is not allowed to take tips unless there are literally no other tipped employees on-staff when the tip is given (at least that's how it is according to MT Dept. of Labor). Most likely it goes into the employee tip pool and is divvied up between everyone who's on-the-clock when the tip is made, excluding any managers (and probably any kitchen staff).
Yeah it's either pooled and divvied or given to the person who made that order, depending on their policy.
