We took a quick overnight trip three hours down the interstate to San Antonio last week and found this fantastic restaurant near the old Pearl brewery. https://curedatpearl.com/
In addition to a choose your own adventure style charcuterie plate, we had beer can mussels and bone marrow. I'm very new to eating marrow, but this one probably ruined me for other experiences. The marrow was topped with escargot and served over a nice, thick chunk of french bread. All the juices dripped down into the bread...

I have no idea. The Mrs wanted to go there. She'd heard good things. And she heard right. It's fucking baller. I highly recommend it. Just fantastic. We had the crispy pig ears, the blood sausage, the sweetbreads with crispy noodles and peanuts, baby octopus, the sea scallops and the roti. Just unreal good.
