Me either. The production on Mind Your Manners is discernibly less processed than anything on Backspacer. As ridleybradout noted somewhere earlier, listen to Gonna See My Friend and then MYM back-to-back: there's definitely been a considerable toning-down of the glossy aspects of Backspacer's sound. The drums sound more like drums, the guitars sound more like guitars.

I'm not sure this is all that uncommon with rock bands. It seems like a relatively convenient shorthand, especially if you're not well versed in theory (which I'm not sure any of PJ are).

As for them being unique, I think they are (or were) relatively innovative, or at least interesting, in their songwriting and arrangements; they do some somewhat unexpected stuff for the genre in which they reside. I think one reason they're not seen as being all that unique is that they don't have that one signature musical sound that is consistent throughout their work. Take U2 and R.E.M.; even without Bono or Stipe's vocals, you can pick out the band from the Edge's delay effects in the former and Peter Buck's arpeggios in the latter. The music in PJ has never really had a single sound that was employed for all (or most) of their work.

To be fair, every interview I've ever read with them includes this plus maybe a metaphor involving a wave or driving. They're all just awful at talking about thier music. And honestly interviews in general .

What websites good for old interviews? I'd love to read some binaural era stuff.
