All the ones I've had the chance to see have been good, but that's not helpful since I don't recall which shows those were. According to p. 141 of 'I Am No Guide: Pearl Jam Song by Song' the versions from Lets Play Two and LV 7/6/2006 are standouts if the authors are to be believed.
I'm not sure it matters much for this. The song was written to be a shared journey, and while it is oddly hushed and muted on S/T, the openness of the live setting, the hugeness of it all, really elevates the song. I think I'd probably take any live version I've ever heard, which have all been quite good, over the studio version, where I have to do some of the transformative work myself.
LV 7/6/2006 is the definitive version.

I’d like to report that I listened to Gigaton today for the first time in probably more than a year and it still holds up. This gives me hope for the next one.

Me too. It was nice out today so I went for a bike ride and listened to gigaton. It was a nice experience.
