I honestly feel like you can't go wrong. Definitely venture outside of Dublin as much as you can. Dublin is a cool city, but it's a city. At the end of the day, not spectacularly different from most cities. And it's a small island. Even your itinerary doesn't afford your staying the night outside of Dublin, you can even still take day trips to some lovely places.
My trip was three weeks, me and one backpack. I flew to Dublin, then took a train to the south and worked my way up the west coast via bus and train, bit by bit. Walked a lot, hiked a lot. Everywhere is beautiful and the people are generally very friendly.
If you have the cajones to rent a car and drive on the left side of the road, that's probably the dream option when you're outside of Dublin. I do not have those cajones.

Right now we are planning on renting a car and driving around a bit. We won't have a ton of time (probably like 10 days or so?). And we want to be able to move.

This trip down under, I’ve finally mastered driving on the left. Kinda worried what driving on the right will be like when we get home.

We took cab up into the rain forest to where Predator was filmed. Checked that spot out, drove down the mountain some to a local tequila still....then down to a locals beach where we had ceviche and beers....
There's a restaurant sitting right on a little river, and there were kids using the rocks as a natural waterslide off the little waterfall,and there was a rope swing people were using to get in the water..it was fun
