I HATE when restaurants/home cooks mess with fish tacos in ways that are not necessary..keep it very simple in the way they were intended.."WHY DO YOU NEED TO PUT SMOKEY CHIPOTLE SAUCE ON THAT?" ARGH..SWEET MANGO SALSA? REALLY?" anyway end of rant...fresh halibut, cod, or even catfish...plenty of cilantro..mexican crema if possible, Sriracha, lime, garlic..the fish can be deep fried as well if you like

pro slaw as long as the cabbage is ultra fine sliced with a mandolin
