I think Stannis can hold his own, but Jaime is one of the great knights of the seven kingdoms. In his youth he crossed swords with the Smiling Knight and lived to tell about it. He earned his spurs on the battlefield and was knighted by none other than Ser Arthur Dayne, Sword of the Morning. He was the youngest knight ever raised to a position in the Kingsguard.
It would be a decent fight, and Stannis will fight until the bitter end, but that end will mean his death.

I loved Stannis. I was rooting for him the whole way. He was the rightful king.
