Stir occasionally until the spinach starts to wilt and the sauce comes down a little. Crack the two eggs directly into it. Cover with foil for short 5 minutes. Turn off the heat, let sit.

I added salt and pepper a few times, too. Up to you. And then drizzled a bit more cream on top at serving.
