Can if tomato sauce
Cherry tomatoes (halved)
Can if chickpeas
Spinach
1 shallot diced
2 tbsp of minced ginger
Cream
2 eggs
Curry paste
Heat/brown the shallot & ginger on med high heart. Add curry paste and stir together. Then add them chickpeas. Stir for a minute or so. Add the tomatoes, tomatoes sauce, cream and water. Stir occasionally until the spinach starts to wilt and the sauce comes down a little. Crack the two eggs directly into it. Cover with foil for short 5 minutes. Turn off the heat, let sit.
I added salt and pepper a few times, too. Up to you. And then drizzled a bit more cream on top at serving.
