Team, Trader Joe's sauerkraut is delicious. Fermented with pickles in it. Really good.

Here's a receipe:

Chop some bacon or pork belly, cook it in a pan, then add a little flour once it gets nice and greasy. Brown the meat in the roux, then add some of that sauerkraut. Sprinkle some fennel seeds in the mix as well.

my first-ever batch of pickles.

mini cucumbers cut into spears, sliced jalapenos, and hatch chile flakes. if these turn out well, i might try pickling some red onions for garnishing.

my pickles came out great.

I think the next batch I’ll quarter them. I basically sliced them into thirds.

I started them on Saturday. This recipe I found says you can try them two hours after refrigeration. I waited 24 hours.

I'm sure there are more complex pickling methods that require longer periods to ferment.

I went with what I felt was the simplest.
